Emily Jones

Head Chef at Si Paradiso


Emily Jones, 29, Has just taken over as the Head Chef at Si Paradiso, Chef Jones continues to aim high and challenges herself to create food with less waste, sourcing ingredients from local producers and artisans.

After spending time in Norway working in a 3 Michelin star restaurant, Emily returned to Perth eager to create a delicious food offering using the finest local produce. She landed at Republic of Fremantle, there Grape to glass and from scratch ethos inspired her.

At Republic of Fremantle she focused on her cooking ethos which saw her take out WA Good Food Guide’s Young Chef of the Year Award in 2021 and the 7News Young Achiever Award for Food and Beverage Excellence (Riverbank Estate) in 2022. Continuing her winning streak, together with the Bar team of Republic of Fremantle, Chef Jones’s curated list of bar snacks saw the Hospitality team take out Best Bar of the year at the 2022 WA Good Food Guide awards.

She has worked at some of Perth’s best establishments including Wildflower, Rockpool and Cook and Mason. Where she developed an appreciation for local produce and exploring the produce Western Australia has to offer.

Scott Bridger

Part owner, Chef, Bib & Tucker


Scott spent much of his early career crisscrossing the globe, working across London, Japan, the Middle East, around Europe, the Caribbean and more.

In 2012 Scott became partners in an exciting new project with Eamon Sullivan and Bib and Tucker was born. Following the success of Bib & Tucker, they embarked opening several other venues around Perth, including May Street larder, Pogo and Goody Twos. Scott now enjoys Running Bib and Tucker and consulting to other venues and spending time in the garden.

Across Scott’s menus offer a consistent food philosophy – create fun, approachable and flavoursome food with no compromise on quality whilst utilising the best produce Western Australia has to offer. The dishes at Bib and Tucker are deeply rooted with the elements of nature, The menu being cooked over fire with local woods and the amazing coastline of Western Australia is the inspiration of the menu.

Scott’s take on modern Australian cuisine is to utilise what’s in season at its full potential- utilising the abundance of seasonal garden produce, local proteins and fresh seafood, that thrive in our clean waters and pastures. Scott and his team work with native ingredients that are foraged and sourced locally and weave them into the dishes to make them approachable for diners to explore and experience the best West Australia has to offer.

Guy Jeffreys runs Kitchen Community, a small scale cooking class that teaches traditional techniques for everyday living in modern kitchens. Guy has been teaching apprentices, chefs, gardeners and hospitality managers how to be their best for years at Millbrook Winery, now with his new business it’s your turn to learn.
